Melanie's Chicken Alfredo

1 chicken breast- cubed or sliced 1/4 tsp salt 1/2 tsp pepper 1 clove garlic 1 tsp butter 1 tbs olive oil Melt butter and olive oil in saute pan on high heat. Add garlic and saute for 30 seconds add chicken and salt and pepper. Brown all sides but don't cook all the way through - 3-5 minutes depending on how it's cut. Remove from pan and cover (this method helps to keep it from getting overcooked). It will continue cooking and should be through by the time the sauce is ready. If not, just throw it all together at the end and cook for a minute or two. Alfredo Sauce 2 tbs butter 3 cloves garlic 1 c. heavy cream 1/2 c milk (I use 1%) 3/4 c shredded parmesan 1/2 c Romano Cheese 3 dashes of hickory liquid smoke flavoring (If I have smoked gouda I use that in place of the Romano and smoke flavoring) Saute garlic in butter. Add heavy cream and milk and simmer for about 5 min. Add cheeses and smoke flavoring and simmer until well combined stirring very frequently. At this point if I need more garlic I usually use powdered so it isn't overkill. Salt and pepper to taste. *Let sauce sit in fridge for about half our after made. This will help it set up.
